The cup protion is half filled with water (to marker) and the lid portion is then attached. The carbon dioxide gas generated during the fermentation escapes through the fermentation tube by intermittendly lifting and dropping the lid (check the clattering sound). It is advisable to only fill the barrel to 80%. For Storing wine, must or fruit juice use a sulphuric solution (water with 1-2 tablets Onewe).
